What is end-grain?

Orientation matters.

End-grain construction stands wood fibers upright so the cutting surface meets the knife edge differently. Four reasons that's worth the extra work.

What it is, why it matters, and how to take care of one.

What is an end-grain cutting board? +
End-grain refers to how the wood fibers are oriented in the cutting surface. In an end-grain board, blocks of wood are stood upright and glued together so the fiber bundles point straight up toward the knife. This is the same construction used in traditional butcher blocks. It's harder to make than a standard edge-grain or face-grain board, but it cuts and wears very differently — in ways that matter to anyone who uses a board every day.
How does end-grain compare to edge-grain or face-grain? +
Edge-grain and face-grain boards expose horizontal wood fibers to the knife. The blade has to slice across each fiber, which dulls the edge faster and leaves visible scoring on the board. End-grain shows the cross-section of each fiber instead — the blade slips between fibers, which then close back together. The result: gentler on knives, fewer permanent marks, and a much longer-lasting surface.
Is end-grain better for my knife edges? +
Yes. The vertical orientation of the wood fibers means the knife edge isn't being slammed against horizontal fiber on every cut — it pushes between fibers instead. Most professional cooks and serious home cooks prefer end-grain for daily use because their knives stay sharp longer between honings.
How thick are Wooded cutting boards? +
A good thick cutting board starts with thick stock — most of our boards are a full 2 inches. We follow what we call our Rule of 8 Inches: a board's thickness should be at least one-eighth of its width. Some larger pieces are 1.75" or 2.5" depending on dimensions and species. Thicker stock means more stability, more grain depth, and a board that holds up to decades of daily use.
How do I care for an end-grain cutting board? +
Hand wash with warm water and mild soap or a vinegar-based detergent, then dry immediately and stand on edge so air circulates on both sides. Never soak it, never put it in the dishwasher. Apply a food-safe board butter (we make Jack Wax for exactly this) every few weeks, more often if you cook with high-acid foods. Cared for this way, an end-grain board lasts decades.
What woods do you use? +
We work primarily with hard maple, black walnut, and American cherry — sourced from a New England hardwood supplier and hand-picked piece by piece. Occasional pieces feature hickory, padauk, or canarywood for visual contrast. All are food-safe hardwoods well-suited to end-grain construction.
How long does shipping take? +
Boards already finished ship in 2–3 business days from our Cape Cod shop. Build-to-order boards (Wooded Designs) take 2–3 weeks from order to ship. Shipping is free within the continental US.
Are end-grain boards dishwasher safe? +
No. Heat and prolonged moisture warp wood and break down the glue between blocks. Always hand wash, dry standing on edge, and oil regularly. Treated this way, an end-grain board will outlast any dishwasher you own.

Yes — every end-grain board is handcrafted start-to-finish in our Cape Cod shop. We say handcrafted because every step happens by hand, by humans, in our shop.
